Over the past few weeks I have been attempting to eat mostly Paleo style – I say ‘attempting’ because I’m not perfect and have slipped up here and there but for the most part have stuck to it. So when that craving for something other than veggies came along and I found this “healthy” recipe I jumped. Oh my chocolate craving I jumped.
This recipe would be filed under one of those not-quite-off-the-bandwagon-but-pretty-darn-close in my Paleo eating habits. But my oh my did this satisfy the chocolate craving and I haven’t wanted chocolate since. Bonus – this recipe only makes 12 cookies so after you share some or freeze some you’re not left with a whole plate of cookies to devour by yourself. Or you might. I’m not judging. 🙂

INGREDIENTS:
2 eggs
1 ripe medium banana
1/2 cup peanut butter
1/3 cup coconut oil, melted (I used butter)
5 tbsp honey
1 tsp vanilla extract
3 tbsp cocoa powder
1.5 cups oats (I used what I had on hand – Better Oats Raw brand oatmeal packets, which worked very well!)
1 tsp baking powder
1/2 cup mini chocolate chips (or less depending on what you like)
DIRECTIONS:
Preheat oven to 350 degrees and line cookie sheet with parchment paper. Set aside. In large mixing bowl, beat eggs together with fork then add banana and mash together. Add peanut butter, coconut oil (or butter), honey and vanilla extract, then combine all ingredients. Add cocoa powder, oats and baking powder. Mix together. Add chocolate chips. Mix again. Drop cookie dough on baking sheet 1.2-2″ apart. Bake for 12 minutes. Let cool before serving.
VERDICT:
2 out of 3 kids did not like them…I think the 2 that did not like them first thought they were no bake cookies and gave it a thumbs down due to disappointment.
1 out of 2 adults did.
