November is my birthday month and it has got me feeling all nostalgic, y’all. I think this is where the introvert musings and reflections (ramblings?) have come into play. (See some of those posts HERE and HERE.)
Usually for my birthday my sweet girl will bake a cake but this year I had been craving a chocolate cake with peanut butter frosting (I had mentioned it HERE). She and the rest of my little family aren’t a fan of that flavor combo and so I decided to create it myself.
Don’t ask me why they aren’t a fan of chocolate cake and peanut butter frosting with a ganache topping…it’s decadent and rich and perfect for a birthday celebration. They must be from another world. #ohwell #moreformom
I made this flavor combo of a cake a few years ago and absolutely loved it! However, with my original recipe no matter how many modifications I made there was still something ‘off’.
So I continued my search and stumbled upon this recipe on Pinterest. It makes an amazing chocolate cake – moist, chocolate-y and oh so good. Bonus, the cake layers bake pretty evenly.
I will say that I did modify this recipe (as I normally do with most recipes) and made the following changes:
- I did not add the chocolate simple syrup (didn’t need it!)
- Instead of adding 2 tsp instant coffee or espresso powder in 1 cup hot water I brewed a dark roast coffee in my Keurig and used 1 cup of that instead.
Like I mentioned on the post linked above, cakes are not my culinary passion so it’s not the prettiest nor most intricate in detail. But it was sure tasty and it satisfied the craving – which was my ultimate goal – so mission accomplished.
Also since this wasn’t the family’s favorite flavor combo they didn’t devour it within 8 hours of completion so I was able to slice it up and freeze it for another time. #momishappy
I’m really excited to use this recipe in cupcakes – I’ll update when I do.
