2021 Easter Cupcakes | Chocolate Covered Strawberries

Easter this year looks a little different with the spacing of the chairs and masks, but isn’t quite the shock of last year’s Easter celebrations. Thankfully we were able to celebrate Easter in church which made my heart so happy. 🙂

I love when the congregation responds to the Pastor’s, “HE IS RISEN” with, “HE IS RISEN, INDEED!” It’s like one big celebration – as it should be!

This year due to the Hubby’s schedule we didn’t do the big celebration dinner so we just stuck with cupcakes – though is there really any other way to celebrate? Cupcakes are a necessity!

DD and I found these on Pinterest and just had to recreate them. Notes for next time – find smaller strawberries! Ha – ours were a little too big! Though still very tasty!

These were super simple and easy – we used store bought cake mix and made a homemade chocolate buttercream. We crumbled up a few cupcakes to use as the “dirt”. Dipped the strawberries in orange colored chocolate wafers (purchased from Michael’s) and then drizzled extra chocolate on top for decoration.

Tip – don’t wait so long to use your strawberries! We waited to long and most were wilted and dull-ish green. LOL 🙂

Though, even with the wilted stems, they were a hit and sooo tasty!
