This is one recipe I could eat every day.
This chicken dinner is a little spicy a little sweet and it tastes amazing. My kiddos enjoy it as well so BONUS for mom!!
This is a very basic recipe and easy to put together. Note – I always end up doubling (usually quadrupling!!) the sauce because I like sauce and rice for leftovers. 🙂 This recipe also goes really well with cauliflower rice instead of regular rice. 🙂

INGREDIENTS:
- 2 cups uncooked long-grain white rice
- 2 cups water
- 6 tablespoons olive oil
- 6 tablespoons soy sauce
- 6 tablespoons honey
- 3 tablespoons distilled white vinegar
- 1 1/2 teaspoons dried thyme
- 1 1/2 teaspoons ground paprika
- 1/2 teaspoon ground cayenne pepper
- 1/2 teaspoon ground allspice
- 1 teaspoon ground black pepper
- 4 skinless, boneless chicken breast halves cut into chunks (original recipe said to leave chicken breasts whole, but I like to dice it up to soak in more of the flavors)
DIRECTIONS:
- Preheat oven to 375 degrees
- Make rice according to box directions (or use cauliflower rice)
- In a 9×13 dish, blend the olive oil, soy sauce, honey, and vinegar. Mix in the thyme, paprika, cayenne pepper, allspice, and black pepper.
- Place chicken breasts in 9×13 dish and coat thoroughly with mixture.
- Place chicken in the preheated oven, and baste occasionally with the mixture, cook 30 minutes, or until no longer pink and juices run clear. Serve over the rice with remaining olive oil mixture.
