I’m not a fan of jarred salsa you find at the local grocery store. I think I’ve tried every brand out there. Some good, and most not so good.
I love the fresh tasting kind you find at restaurants. It’s as if the tomatoes and peppers and cilantro are just picked from the garden out back. I could eat bowls and bowls of this – and if I’m being honest here (er, authentic and transparent) then I do. Eat bowls and bowls of this.
It’s kind of like when you go to Olive Garden and fill up on breadsticks and salad so you can take your meal home for leftovers? I do that with chips and salsa. Probably not the healthiest, but I don’t judge you so please reciprocate. Thank you very much. Which this does make me wonder if anyone else does this – save the meal and load up on the appetizers?
I had to duplicate these amazing flavors or I’d be spending a ton of money eating out every week just to get my salsa fix.
After searching and searching for ‘the perfect’ recipe and never finding it, I pulled the best from each recipe and made my family’s favorite salsa recipe. We just can’t get enough of this salsa and I always have to make a double batch because it goes so darn fast around here. My kiddos EAT. THIS. UP!
JB’s BEST SALSA
1 large (28 oz.) can whole tomatoes, drained (or un-drained if you prefer more tomato taste)
1 can Rotel (juice and all – don’t drain)
1/2 onion
2 Roma Tomatoes, chop off ends
4 pinches salt (or to taste)
2 pinches cumin (or to taste)
2 pinches garlic powder (or to taste)
Cilantro (we use a good sized amount, but suite to your taste)
Juice from 1/2 lime
7+/- slices of Jar jalapeno and some juice (you could use fresh, but I normally don’t have any on hand so I use some slices out of the jalapeno jar)
Put all ingredients in blender and pulse to chunky consistency or process further to get smooth liquid.
The great thing about this recipe is you can vary the ingredients to suite your taste. Hope you enjoy this salsa recipe as much as we do.
