There is noting better than the real FRIED counterpart, but when you’re trying to watch your fried foods and are craving fried ice cream, this will work. I made this for a family dinner years ago and it was a hit, though some said they could do without the coconut shreds.
Ingredients Needed:
Nilla Wafers
Shredded Coconut
Cinnamon
Vanilla Bean Ice Cream
Honey
How To:
Scoop the ice cream onto a cookie sheet, forming into round baseball/softball size. Freeze for 1 hour. Crush Nilla Wafers in food processor, add coconut and cinnamon and stir (I didn’t measure anything). Remove ice cream and roll into wafer mix. Freeze again 1 hour. Place on plate and drizzle honey over top.
