Chili Cheese Dog Casserole | Quick and Easy Dinner Recipe

Back in 2014 when we made our move from city living to the “country” life we would drive an hour (one way) every so often throughout the week to see the progress on the building of our home.

During these small road trips the kiddos – of course! – would inevitably be hungry (they were 13, 11 and 8 at the time). They would claim to be famished, even though they had eaten prior to leaving and even though they had brought snacks galore with them…but I digress. #humangarbagedisposals

And so it became a tradition in those 10 months of the traveling between the two cities that we would pick up chili cheese dogs at the only fast food joint in our new town and eat dinner at our not-yet-finished house.

When we finally moved in to our home the kids commented numerous times in those first few months that they missed the chili cheese dogs. I’m not certain if they actually missed the dogs or if they just missed eating out every time we came to town. #habitsareeasytocreate

I couldn’t just make the usual chili cheese dogs as nothing can replicate the greasy mess from the fast food joint – I mean tasty, greasy mess *wink*, so I came up with a close second.

It’s not really a casserole and it’s not really a chili cheese dog but it works when needing a quick and easy dinner that the kiddos can also create on their own.
